Roast Beef
This recipe is one of my all-time favorite comfort foods. My grandmother used to make it after church on Sunday afternoons when I was growing up and every time I make this it reminds me a little bit of my childhood. Thanks to some shortcuts that my mom discovered this recipe is also quite simple.
Gravy
This is my standard recipe that I use for pretty much any gravy I make. This recipe was passed down from my mom (and possibly from her mom) and it's one of the first recipes my mom ever shared with me. It's also incredibly easy, which is a big plus. We use it every year on Thanksgiving with our turkey and every time we make roast beef.
Collard Greens
One night last week I was roaming the produce section looking for something different to have with dinner when I stumbled upon the collard greens. I've never cooked these before, I thought, but I know my husband loves them, so why not give it a try? So I bought a bunch and headed home to find a good recipe. I found one on the Food Network's website from Sandra Lee that looked promising but I was missing several of the ingredients. Boy am I glad that I decided to improvise my way through it anyway because these are seriously the best collard greens I've ever had, and I'm not even kidding. They are so good that if the recipe had made more than two servings I would have had more for dessert!
Ingredients
4 strips bacon, diced
1 tbsp onion jelly
1 tsp dried onion
1 bunch collard greens
1 tablespoon chopped garlic
1/2 teaspoon red pepper flakes
2 tablespoons apple cider vinegar
Salt and pepper
Strip the leaves from the stems of the collard greens and give them a rough chop so that the pieces are no bigger than two square inches.
In a high-sided skillet, cook the bacon over medium heat until brown, about 5 minutes. In the same pan add the onion jelly and onion flakes and saute for one minute.
Add the garlic, red pepper flakes, apple cider vinegar, salt and pepper to the skillet and stir to mix the ingredients. Add the greens, stir and cover the skillet. Cook for 15 minutes, stirring halfway though.
Another great thing about this recipe? I had no idea that collard greens were so quick to cook. I had heard before that they took hours to cook so I had never attempted them before. Now that you can see they're so easy I hope you give this recipe a try, too!
